Worms are the lowest of all creatures, and a type the Grail is intimately familiar with. And man always seems to place dark and evil creatures as slithering monsters in the ground. From these ancient fears, the Olgoi-Khorkhoi Grail Beast is created, in the image of the the Mongolian Death Worm.
The Worm is a gargantuan, bright red burrowing monster, two-three meters long and the thickness of a man's leg. It's heavy even for it's size, weighing 200-300 pounds (90-130 kg). The questing beasts are blind, but can sense their prey by vibration and by sensing for prana. While not very intelligent, they are disgustingly aggressive, and strong enough to burrow through rock or concrete. Further, they excrete a sort of noxious acid mixture, which they use both to assist their burrowing and as an attack.
Worms mindlessly home in on whatever sources of prana they can detect, and use vibrations to fine-tune their homing instincts onto probable human targets. When attacking, the beasts prefer to smash upward through the ground and take tearing bites, or to vomit acid in the direction of the target. If they manage to get a solid grip on their target, they will twist and pull away, generally tearing off whatever they've managed to grab. If attacked, they will quite happily smash their upper body into the attacker, using their weight, strength, and the acids coating their body as their attack. The acids in their saliva and coating their body makes them dangerous to touch or be touched by the Olgoi-Khorkhoi.
If the target wisely retreats, the worm will burrow back into the ground, and attempt to follow beneath them. If the burrow is shallow enough, there will be clear sounds from it, though deeper burrowing beasts may avoid notice. The worms do not obsess over a single target, though; they merely track the most potent target they can find. A better target would cause them to change their minds, as would managing to get beyond their ability to sense prana.
Ogloi-Khorkhoi do not intentionally cooperate, but the senses they use to hunt means stronger prana sources (IE, stronger magi) tend to be attacked by more than one at a time, as they provide a more attractive target. Weaker magi and humans with prana would not attract as many, as they seem to be less powerful targets. However, for some reason, masters without servants are disgustingly attractive to the worms, making them prioritize those with unused command seals even over stronger magi.
The worms, while grotesque and strong, are possessed of no unearthly powers. A magus could fend off one without much trouble, as long as they don't actually touch it. A human is in more danger, but could still overpower a worm by simply shooting it repeatedly, or attacking with a proper weapon while avoiding the acidic fluids. To a servant, these beasts are almost beneath notice.

Acidic Excretions
Nearly everything about the Olgoi-Khorkhoi is acidic. The spittle, the blood, all of it's excretions are potent acids. It also is coated with it's own acids, providing both a protective layer against weapons and assisting it in it's burrowing. The beasts can vomit up their own acids, but this attack is necessarily short-ranged.
